I WANTED TO TRY THIS DISH WHEN I WAS IN HUE BUT I COULDN’T FIND IT, SO I DECIDED TO MAKE IT MYSELF. I WENT TO THE MARKETS AND BOUGHT SOME CHICKEN, BEAN PASTE, GARLIC AND LEMONGRASS. ONE THING I COULDN’T FIND WAS BAMBOO SKEWERS, SO I ASKED A FEW LADIES AND THEY LAUGHED: ‘YOU WANT TO BUY BAMBOO SKEWERS? HAH! JUST GO OUTSIDE TO THE BAMBOO TREE AND SNAP IT OFF FRESH.’ IT FELT SO GOOD THREADING THE MEAT ONTO FRESH BAMBOO, A LUXURY YOU CAN ONLY HAVE IN ASIA.
