WITH JUMBO PRAWNS COMES PRAWN ‘BUTTER’, ALSO KNOWN AS TOMALLEY. PRAWN BUTTER IS A DELICACY IN VIETNAM AND IS FOUND IN THE PRAWN’S HEAD. I USE PRAWN BUTTER IN THIS RECIPE; WHEN COOKED IT HAS A POWERFUL CONCENTRATED PRAWN FLAVOUR. TO OBTAIN THE PRAWN BUTTER, SQUEEZE THE PRAWN HEAD UNTIL ALL THE INNARDS HAVE BEEN EXCRETED, THEN SCOOP OUT THE ORANGE-COLOURED BUTTER.
