I DECIDED TO TAKE A LONG WALK ALONG NHA TRANG BEACH, AWAY FROM THE NOISE AND TOURISTS. TWO KILOMETRES LATER, I SAW SOME LADIES WEARING CONICAL HATS SITTING ON THE WHITE SAND, GRILLING SQUID. I SAT WITH THEM FOR HOURS, EATING DRIED SQUID, SEMI-DRIED SQUID AND SQUID SIMPLY MARINATED IN OYSTER SAUCE.
In a bowl, combine the rice wine, shallots, garlic, oyster sauce, fish sauce, brown sugar and sesame oil. Add the squid body and tentacles and toss to coat well, then cover the bowl and leave the mixture at cool room temperature for 30 minutes.
