TRAVELLING THROUGH THE MEKONG, I NOTICED THE LARGE INFLUENCE THAT CAMBODIA HAS HAD ON THIS PART OF VIETNAM. THIS NOODLE SOUP IS A CLASSIC CAMBODIAN-STYLE SOUP. WHEN I ORDERED IT FOR THE FIRST TIME, I WAS A LITTLE HESITANT AS I THOUGHT IT WAS GOING TO BE TOO FAR HEAVY, BUT I FOUND THE SOUP TO BE QUITE LIGHT AND VERY WELL BALANCED.

I USE UDON NOODLES IN THIS RECIPE AS THEY ARE READILY AVAILABLE, BUT IF YOU HAPPEN TO BE AT A SPECIALISED VIETNAMESE MARKET, ASK FOR TAPIOCA NOODLES AND GO
