MY PARENTS SERVED THIS DISH AT THEIR VERY FIRST RESTAURANT, PHO CAY DU, IN CABRAMATTA, SYDNEY. I REMEMBER A CUSTOMER TELLING ME THAT THIS DISH REMINDED HIM OF HIS HOME IN THE MEKONG. THIS ISN’T YOUR REGULAR CHINESE FRIED RICE; THIS FRIED RICE IS MEKONG-STYLE AND HAS MANY LAYERS TO IT. I WAS VERY EXCITED WHEN I SAW IT BEING SERVED IN THE MEKONG DELTA.
