MY PARENTS SERVED THIS DISH AT THEIR VERY FIRST RESTAURANT, PHO CAY DU, IN CABRAMATTA, SYDNEY. I REMEMBER A CUSTOMER TELLING ME THAT THIS DISH REMINDED HIM OF HIS HOME IN THE MEKONG. THIS ISN’T YOUR REGULAR CHINESE FRIED RICE; THIS FRIED RICE IS MEKONG-STYLE AND HAS MANY LAYERS TO IT. I WAS VERY EXCITED WHEN I SAW IT BEING SERVED IN THE MEKONG DELTA. THE SUBTLE SALTINESS OF THE FISH POWDER REALLY MAKES THIS RICE DISH UNIQUE. YOU CAN FIND SALTED MACKEREL STEAK PACKAGED IN SINGLE PORTIONS AT
