THE LOTUS PLANT IS MY MAGICAL PLANT; IT CAPTURES MY ATTENTION AND ADMIRATION EVERY TIME I SEE IT POKING OUT OF ITS POND, WITH SUCH A VIBRANT DISPLAY OF COLOUR AND BEAUTY. WHILE I’M TAKEN BY ITS APPEARANCE, I’M ALSO AMAZED BY THE MANY WAYS IT IS USED IN VIETNAMESE COOKING: FROM PLUCKING ITS SEEDS FOR DESSERTS, TOSSING ITS ROOTS AND STEMS IN STIR-FRIES AND SALADS, TO USING ITS LEAVES FOR WRAPPING AND STEAMING.
