  • 50 g ( oz/¼ cup) white sticky (glutinous) long-grain rice

Method

Put the rice in a large bowl and cover with water. Set aside to soak for a few hours at room temperature, then drain. Line a bamboo or metal steamer with a piece of muslin and place over a saucepan of boiling water. Spread the rice onto the muslin, cover with the lid and steam over high heat for 20 minutes.
