Ingredients

Yeast

  • 2 ripe bananas or, better still, plantains
  • 1 large tbsp plain flour
  • 1 large tbsp sugar
  • ½ cup warm water

Method

  • Mash the skinned bananas, add the other ingredients, then seal in a container (a plastic box wrapped in foil works).
  • Leave for two days while it ferments and gets frothy.
