Ingredients

  • 2 ripe avocados
  • ½ cup whipping cream
  • Very finely chopped mint
  • 3 tbsp caster sugar
  • Juice of half a lime and rind too

Method

  • Mash the avocados, and mix with sugar, mint and lime juice and rind.
  • Whip cream until it is fluffy and fold in.
  • Cover with cling film and chill for two hours.
