  • 3 lb tilapia fillets
  • Juice of 2 fat limes
  • 1 small Bunch fresh dill
  • 2 green chillies
  • White flour seasoned with salt
  • Salt
  • 1 large Bunch fresh coriander
  • 10 fresh mint leaves
  • 1 tsp turmeric
  • Sunflower oil about 2 in. high in a deep frying pan


  • Rub salt and turmeric over the tilapia and refrigerate (covered) for a couple of hours.
  • Whiz the herbs, chillies and lime juice, and stick paste over the fish. Return covered to the fridge for at least another two hours.
  • Take the slices from the marinade, let excess liquid drip off, then coat well with flour.
  • Heat oil until a small piece of bread rises when you throw it in.
  • Fry the fish, turning over after three to four minutes on each side.
  • Drain excess oil off on kitchen paper and serve with salad or chips.
  • You can make this with fish batter too; that requires deep-frying.
