Ingredients

  • 1 onion
  • 1 lb squid, cut into small rings – you can use the other bits too
  • Lots of parsley
  • Salt and pepper to taste
  • 1 tin chopped tomatoes
  • 3 cloves garlic
  • 1 glass cheap red wine
  • Lemon juice
  • 2 tbsp olive oil

Method

  • Heat the oil, then fry the onions until translucent.
  • Add the finely chopped garlic, and cook for a couple more minutes.
  • Add the tomatoes, wine, lemon juice, salt and pepper.
  • Cover, lower the heat and cook for five minutes, then add the squid.
  • Cover and simmer for twenty minutes.
  • The Greek cook who gave me this recipe told me you either cook squid very fast or very slowly for a long time.
  • Add chopped parsley; serve with crusty bread.
