- 1 lb squid, cut into small rings – you can use the other bits too
- Lots of parsley
- Heat the oil, then fry the onions until translucent.
- Add the finely chopped garlic, and cook for a couple more minutes.
- Add the tomatoes, wine, lemon juice, salt and pepper.
- Cover, lower the heat and cook for five minutes, then add the squid.
