  • 1 lb squid, cut into small rings – you can use the other bits too
  • Lots of parsley


  • Heat the oil, then fry the onions until translucent.
  • Add the finely chopped garlic, and cook for a couple more minutes.
  • Add the tomatoes, wine, lemon juice, salt and pepper.
  • Cover, lower the heat and cook for five minutes, then add the squid.
  • Cover and simmer for twenty minutes.
