  • 1 lb minced chicken
  • 1 green chilli
  • ½ tsp salt or to taste
  • 1 egg
  • 1 tbsp sunflower oil
  • Bunch fresh coriander
  • 1 tsp crushed ginger and garlic
  • 1 tsp garam masala
  • ½ cup unroasted cashew nuts


  • Mix all the ingredients together except for the oil.
  • Cover and chill for three to four hours.
  • Line a baking tray with parchment paper and lightly grease the top.
  • Have ready a bowl with hot water, and start making sausage shapes with the mixture, dipping your hands in the water from time to time – they don’t need to be perfect shapes.
  • Brush the shapes with oil, then bake in a medium oven (350°F, 180°C, gas mark 4) until they brown.
  • Test to see the insides are thoroughly cooked.
  • Eat with Greek yoghourt, which you can pep up with chilli powder, or with black pepper or cumin powder and salt.
