  • The largest prawns you can buy with the shells on


  • Make a paste with the filling ingredients.
  • Cut each prawn open to make a butterfly, still connected along one edge.
  • De-vein.
  • Spread filling thickly on one side and close the prawns up again.
  • Wrap in foil and either place on a grill on a barbecue or cook on a tray in a hot oven (425°F, 220°C, gas mark 7) for about ten minutes.
