Ingredients

  • 1 large salmon, filleted and cut in half lengthways
  • 3 tbsp olive oil
  • 2 fresh chillies

Method

  • Mix the oil and paste, and spread it liberally over the fish.
  • Wrap the fish loosely in foil.
  • Chill for a few hours.
  • Bake for fifteen minutes (375°F, 190°C, gas mark 5).
  • Open the package and return to the oven for five more minutes.
  • Serve with healthy baked potato – NO BUTTER; use the juices from the fish.
