I’ve called this bean dish “Indian-style” because in Indian cooking when making dal or beans, we typically sauté onions, garlic, chili and tomatoes in oil. Here I’ve applied this technique to pinto beans, which are commonly found in Mexican cooking – giving this a fusion twist.
