Wontons are a popular Chinese street snack, containing many different fillings. Here a heady combination of shellfish and creamy soft tofu combine to make a satisfying snack. Wontons are very easy to make and lend themselves to deep-frying, steaming or adding to soups. It is important to work quickly when using wonton skins – after making the wontons, do not let them stand for too long before cooking, as the skins can become brittle when exposed to the air.
