Tofu is the perfect ingredient for marinating in a tasty sauce as it absorbs flavours so well. This satisfying dish is a modern take on the vegetarian cuisine developed by Buddhist monks in Japan. If you don’t have mirin, you can use Amontillado sherry instead.


  • 600 g/1 lb 6 oz firm tofu, drained

  1. Slice the tofu into 1.5cm/1in cubes.
  2. To make the marinade, chop the spring onions finely. Mix with the other marinade ingredients in a ceramic or aluminium tray with sides or a wide, shallow bowl. Soak the tofu cubes in the marinade for 15 minutes.
