This classic salad of green beans and sweet cherry tomatoes is combined with a silken tofu version of pesto that is creamy and delicious.

Ingredients

  • 600 g/1 lb 6 oz green beans, trimmed

Method

  1. First make the pesto by processing the tomato and garlic in a blender or food processor until smooth. Add the rest of ingredients, season and blend again until the sauce is smooth and creamy.
  2. Blanch the beans in boiling salted water for 2 minutes, or until just tender. Drain.
