Asparagus is not only elegant but also delicious. This fabulous Thai dish, combining tofu and asparagus, is the perfect side dish to serve when fresh asparagus is in season.


  • 250 g/9 oz deep-fried tofu cubes

  1. Preheat the grill or broiler to medium. Place the tofu cubes in a grill pan and grill for 2–3 minutes, then turn them over and continue to cook until they are crisp and golden brown all over. Watch them carefully; they must not be allowed to burn.
