Here is an alternative to the more usual meat- or rice-stuffed classic dish. The tofu will soften and melt into the peppers as they bake and the use of garlic or herb olive oil enhances the flavour.
Ingredients
4red (bell) peppers
1orange (bell) pepper, seeded and coarsely chopped
1yellow (bell) pepper, seeded and coarsely chopped
Preheat the oven to 220°C/425°F/Gas 7. Cut the red peppers in half, leaving the stalks intact, and discard the seeds. Place the red pepper halves on a baking sheet and fill with the chopped orange and yellow peppers.
