Here is an alternative to the more usual meat- or rice-stuffed classic dish. The tofu will soften and melt into the peppers as they bake and the use of garlic or herb olive oil enhances the flavour.

Ingredients

  • 4 red (bell) peppers
  • 1 orange (bell) pepper, seeded and coarsely chopped
  • 1 yellow (bell) pepper, seeded and coarsely chopped

Method

  1. Preheat the oven to 220°C/425°F/Gas 7. Cut the red peppers in half, leaving the stalks intact, and discard the seeds. Place the red pepper halves on a baking sheet and fill with the chopped orange and yellow peppers.
