Crisp-fried tofu in a tangy tomato sauce

This is a light, tasty dish. Cubes of firm tofu are first deep-fried and then tossed in a warm spicy sauce of tomatoes, chillies and ginger to create a warming delicious dish for everyday eating.

Ingredients

  • vegetable or groundnut (peanut) oil, for deep-frying
  • 450 g/1 lb firm tofu, drained and cut into bitesize cubes

Method

  1. Heat enough oil for deep-frying in a wok or heavy pan. Fry the tofu, in batches, until crisp and golden. Remove with a slotted spoon and drain on kitchen paper.
  2. Reserve 30 ml/2 tbsp
