Many vegetarian dishes in China feature tofu prominently, using the different types such as soft, firm, fried or marinated tofu, which all have a high protein content. In this recipe preserved beancurd seasons the sauce for two other kinds of beancurd or tofu. The two types of tofu used here are deep-fried golden cubes or puffs, which have a slightly wrinkly skin, and dried bean curd skins.
