Ingredients: 1 spring onion (scallion), finely; 2 eggs; sliced on the diagonal, and 5 ml/1 tsp preserved winter vegetable (tung chai), to garnish; 1 spring onion (scallion), finely; 5 ml/1 tsp cornflour (cornstarch); 250 g/9 oz/generous 1 cup minced (ground) pork; 30 ml/2 tbsp light soy sauce; 2.5 ml/½ tsp ground black pepper; 250 g/9 oz firm tofu, drained and cut into bitesize cubes; 30 ml/2 tbsp sesame oil
