This classic blend of ingredients makes a style of soup that is popular throughout China. In Henan, Hunan and Sichuan, this soup is cooked with various seasonings, and some will be thickened with cornflour whereas others are enriched with wine. The Sichuan version is usually fiery with chopped chillies. It is a dish that allows a chef to use his ingenuity.
