Combining pork and tofu in these tasty, deep-fried croquettes not only helps to eke out the meat, but also minimizes the quantity of saturated fat – resulting in an economical and healthy dish.
Heat a little vegetable oil in a large frying pan, then add the pork, onion, mustard, thyme or sage and seasoning. Stir fry for 5–10 minutes, until the pork is cooked and golden.
Add the pork mixture to the tofu and divide into eight equal-size portions.
