Tacos are the ultimate savoury Mexican finger food, but here they are served as a sweet vegan treat, still eaten hot but made with slices of tofu, fresh fruit and soft taco shells.
Arrange the tofu slices in a shallow dish. Pour over the lime juice and rind and set aside to marinate for half an hour.
When you’re ready to prepare the tacos, heat the oil in a small pan over a medium heat. Add the marinated tofu, lime, maple syrup and the strawberries and cook, stirring regularly, until soft and piping hot.
