Serve this soup on a special occasion as it’s essentially a party soup. Use fresh chestnuts and buy the best, the larger ones are easier to peel.
Cut a slit on the flat side of each chestnut and place them in a saucepan. Cover with boiling water, reboil and simmer for 10 minutes. Drain and peel away both the outer and inner skins. It is advisable to prepare the chestnuts in two lots; on
