Method

Select a head of celery that has some leafy parts. These should be chopped and added since they give the soup an excellent flavour.

Peel and slice the potatoes. Peel and finely chop the onion. Separate the head of celery, scrub the stalks well and then shred both the stalks and leaves finely.
