  • 2 ripe avocados
  • pints (scant 1 litre) chicken stock

Method

Avocado soup has a fresh, delicate flavour, and a pretty pale colour. Serve it well chilled.

Halve the avocados and remove the stones. Scoop out the flesh into the glass container of an electric blender and add the chicken stock. Cover and blend for a few moments until smooth. Pour into a bowl and stir in the cream, lemon juice, and salt and pepper to taste. Chill well, then stir in a f
