  • 1 small cauliflower
  • salt
  • juice of ½ lemon

Method

Cut the stem off the cauliflower, remove all outer leaves and soak the head in cold, salted water for a few minutes. Half-fill a saucepan with salted water and bring to the boil. Slash deep cuts into the cauliflower stalk and put, head downwards, into the boiling water. Add the lemon juice to keep the cauliflower white and simmer for 10 minutes.
