  • 1 oz (25 g) butter
  • 1 small onion

Method

An effective recipe to prepare when there is little time to spare. Use small, closed button mushrooms.

Melt the butter in a saucepan. Peel and chop the onion. Add to the pan and fry gently to soften but not brown. Add the washed, trimmed and thinly sliced mushrooms, cover and fry gently for 2–3 minutes until the juices run out. Stir in the stock and bring almost up to the boil. Draw off
