Break the cauliflower head into sprigs of even size and wash well. Using a small sharp knife, pare away as much of the skin from the stalks as possible. Add the cauliflower sprigs to boiling salted water with a little lemon juice added and cook for about 10 minutes or until just tender. Drain well and place them in a salad bowl.
