If using smoked salmon trimmings, cut away any pieces of skin or small bones. Mince the smoked salmon flesh or chop it finely. Place the butter and oil in a mixing basin and cream together very thoroughly. Gradually beat in the smoked salmon until the mixture becomes a thick paste. Beat in the lemon juice, the cream and cayenne pepper.
Pile into a small serving pot and chill for a few h
