  • lemon juice or vinegar

Method

The whipped butter for this recipe is best made using an electric hand mixer. Beating liquid into butter by hand is hard work.

Trim the long stalks and soak the artichokes in cold salted water for 1 hour to remove all the dust. Rinse and prepare each one in turn. Using a sharp knife, cut about ½ inch
