Method

Melt the butter in a saucepan. Add the cheese, and the milk or beer, both of which are traditional, or the whisky which is not traditional but gives the rarebit a delicious flavour. Add the mustard and a seasoning of salt and pepper and stir over low heat, until the cheese has melted and the mixture is smooth. Draw off the heat and beat in the egg yolk. The addition of the egg makes the mixture
