Melt the butter in a saucepan. Add the cheese, and the milk or beer, both of which are traditional, or the whisky which is not traditional but gives the rarebit a delicious flavour. Add the mustard and a seasoning of salt and pepper and stir over low heat, until the cheese has melted and the mixture is smooth. Draw off the heat and beat in the egg yolk.
