  • 2 lb (1 kg) smoked haddock on the bone
  • 1 carrot

Method

Cut the haddock into pieces and place in a saucepan. To estimate amount required, add water to cover. Remove the fish and add the peeled and sliced carrot and onion, the parsley stalks, bay leaf, salt and peppercorns to the pan. Bring to the boil and simmer gently for 10-15 minutes. Replace the smoked haddock in the pan and poach gently for about 10-15 minutes, or until the fish is cooked. Remo
