Cut the haddock into pieces and place in a saucepan. To estimate amount required, add water to cover. Remove the fish and add the peeled and sliced carrot and onion, the parsley stalks, bay leaf, salt and peppercorns to the pan. Bring to the boil and simmer gently for 10-15 minutes.
