  • milk
  • salt and pepper
  • medium oatmeal for coating

Method

Scale and wash the herrings. Cut away the heads and tails from the fish. Slit each herring down the belly, and clean out the inside. Place the herrings on a clean working surface with the inside spread open against the board. Press down the back to loosen the bone, turn over and pull away the bone from each one.
