Method

Rub the meat over with cooking salt. Place in a deep bowl with the cloves, peppercorns, mace, vinegar, and just enough water to cover. Leave to marinate for 24 hours, turning several times.

Drain and place the meat in a large casserole, cover with enough of the marinade to come about halfway up the joint, then add the peppercorns but discard the cloves and mace. Cover with a lid and pla
