Method

Sift together the flour and salt into a mixing basin. With a knife mix the fats together on a plate until softened and blended. Spread evenly over a plate and mark into four equal portions. Rub one portion into the sieved flour. Add the mixed water and lemon juice, and mix to a rough dough in the mixing basin. Turn out on to a lightly floured working surface and knead to a smooth dough.
