Method

A purée of celeriac, with a little potato added, is a vegetable that goes very well with game.

Peel and cut up both the celeriac and the potatoes. Place in a saucepan and cover with cold salted water. Celeriac tends to discolour and should be placed in acidulated water as it is prepared, if not to be used immediately. Bring the vegetables to the boil and simmer for 20–30 minutes, or unt
