  • 2 medium onions
  • 2 green peppers
  • 1 clove garlic

Method

Peel and slice the onions. Halve, deseed and shred the green peppers. Peel and chop the garlic. Heat the oil in a large, heavy frying pan, add the onions, green peppers and garlic. Cover with a lid and cook gently for about 15 minutes, until tender. Shake or stir the contents of the pan occasionally, taking care not to allow the onions or peppers to brown. Meanwhile, peel and cut the aubergines
