Peel and slice the onions. Halve, deseed and shred the green peppers. Peel and chop the garlic. Heat the oil in a large, heavy frying pan, add the onions, green peppers and garlic. Cover with a lid and cook gently for about 15 minutes, until tender. Shake or stir the contents of the pan occasionally, taking care not to allow the onions or peppers to brown.
