  • 1 egg yolk
  • pinch dry mustard
  • salt
  • freshly milled pepper

Method

Place the egg yolk in a deep mixing basin. Add the mustard, seasonings and a little of the vinegar or lemon juice. Place the basin on a damp cloth or sponge square; this helps to steady the basin while mixing. Have the oil measured into a jug for easy pouring.
