  • 2 egg yolks
  • salt
  • freshly milled pepper
  • pinch mustard

Method

Never attempt to make less than half a pint of mayonnaise in a blender, unless it is a very small one. A small quantity of mixture will not blend properly in a large machine.

Put the egg yolks and seasonings in a clean, dry blender. Add the vinegar or lemon juice, then, using the lowest speed, blend them together.
