Put the seasoning of salt and pepper, the sugar and the mustard into a wide-necked, screw-topped jar. Add the vinegar, cover and shake for a moment to dissolve the seasonings. Add the oil, re-cover and shake vigorously until a smooth emulsion has been formed.
