Method

Melt the butter in a large saucepan over low heat. Stir in the flour and cook gently for 1 minute. Gradually stir in the milk, beating well all the time. Bring the mixture up to the boil – at this stage the mixture will be very thick. Allow to cook for 1–2 minutes, then draw off the heat and cool until the hand can be held comfortably against the sides of the pan.
