Select apples of even size, wash and remove centre core leaving the apples whole. Run the tip of a sharp knife round the centre of the apple, just to cut through the skin. This allows the apples to puff-up when baking, without splitting the skins unattractively. Place the apples in a baking dish or roasting tin.
