Method

This mousse has a delicious flavour and is worth making when fresh blackberries are in season.

Wash and pick over the blackberries. Place in a saucepan along with the sugar and strained lemon juice. Place over low heat, cover and simmer gently for about 10 minutes – as the fruit heats the juices will form. Meanwhile, measure the water into a small basin, sprinkle in the gelatine, and se
