Method

Strawberries, raspberries, cherries, peaches, plums and Chinese gooseberries, can be added to, or used in place of, the fruits in the recipe, depending on the time of year.

Prepare the syrup first and allow it to cool before adding the cut-up fruit. With lemon juice added to the syrup, all white fruits such as bananas, apples and pears will remain white and undiscoloured.
