Heat the dripping in a large saucepan. Peel and slice the onion and add to the pan. Fry gently for 5 minutes to soften, then add the minced beef, salt and freshly milled pepper. Continue to fry a little more quickly to brown the meat. Sprinkle the flour over the mince, stir in the tomato purée and stock. Bring up to the boil, then lower the heat, cover the pan with a lid and simmer gently for ½
