Peel the potatoes and place in a saucepan with sufficient cold, salted water to cover. Bring to the boil, then simmer for 15–20 minutes or until tender, but do not overcook. Drain the potatoes well, return to the hot pan and dry thoroughly over low heat for a few moments. Rub the potatoes through a sieve to get rid of all the lumps.
