Peel the apples, then quarter and core them. Cut up finely and place in the saucepan along with the water and butter. Cover with a lid and cook very gently, stirring or shaking the pan occasionally, until the apples are soft – takes about 15 minutes. Draw the pan off the heat and beat the apples to a pulp. Stir in the sugar and mixed spice. Dividing the mixture equally, spoon into two suitable-
